KILCHOMAN 100% Islay Bottle Description~ Kilchoman is remarkably contemporary by Scotch Whisky standards (production commenced in 2005), yet it’s most notable for its adherence to old fashioned methods. There’s justification for Kilchoman’s slogan of “Taking whisky back to it’s roots”. It is essentially a ‘farm distillery’, as many were in the early nineteenth century. Just about everything to do with whisky production happens on site. In the case of the 100% Islay release, even the barley is grown and malted by the distillery - highly unusual nowadays when most are either purchasing barley from around Scotland or importing the raw materials. This, the fourth edition of the Kilchoman 100% Islay is a vatting of four and five year old whisky matured in ex-Bourbon casks. Tasting note~ Color: Brilliant straw gold Nose:Superb aromatic lift offers smoked ham, roasted root vegetables, fennel, menthol tobacco and sweetens in later passes accenting cocoa, vanilla, tea biscuits and more. Palate:A slow cascade of juicy baked citrus, lanolin, cocoa and salted caramel in the mouth, fizzes with complexity; finishes Finish: Perfectly balanced and fresh with light fennel, menthol smokiness and late dried coconut in the fade. |
